# 3 – And here’s a healthy treat recipe, thanks to the people at Swanson, for Banana Cacao Nib Cookies. You can get everything except the bananas, eggs, flour and cloves at Swanson, a great company with great discount prices:

  • 1/4 cup Organic Coconut oil, melted
  • 2/3 cup Y. S. Raw Honey
  • 1 cup mashed bananas
  • 1/2 cup Organic Coconut Shreds
  • 1 cup whole wheat flour
  • 1/2 teaspoon Bob’s Red Mill Aluminum Free Baking Soda
  • 2 eggs
  • 1 teaspoon Himalayan Crystal Salt
  • 1 teaspoon Organic Cinnamon
  • 1/4 teaspoon ground cloves
  • 3 cups Bob’s Red Mill Organic Extra Thick Rolled Oats
  • 1/2 cup Organic Cacao Nibs

Directions:

Preheat the oven to 350 degrees. Beat the eggs, melted coconut oil and honey until smooth. Add the mashed bananas and mix well. Mix the dry ingredients (wheat flour, baking soda, salt, cinnamon and cloves) together. Add to the wet mixture. Add the rolled oats, cacao nibs and coconut shreds and mix thoroughly. Drop cookies on non stick cookie sheet or baking stone and flatten with a fork. Bake for 10 to 15 minutes.

Makes 3 dozen cookies

Servings: 2 cookies, 18 servings total
